Back in the Saddle, Again

So, My family and I spent the last 10 weeks in Utah while my husband was on sabbatical. And, my WFPB diet and blog were on sabbatical , too. Not the best choice I have made. Not the worst, either. I will tell you a few things I learned, though.

Number 1: While eating cheesy, fatty foods may taste good, they don't make me feel good. Let's just say, I hat diarrhea quite often over the last 2 months. Yes, that is an overshare. But, it is also the ugly truth.

Number 2: I gained back about 5 pounds of the 20 I lost. Bummer.

Number 3: It is WAY easier to be healthy in your own home.

Alfredo



Oh, how I have missed me some Alfredo sauce. So, I decided to look around for a good recipe.

HERE is the recipe I used.

My husband liked it more than the "Real stuff". The kid thought it was an 11 and the "Real stuff" is a 13. I am sick and so nothing tastes right. We had company and they all had seconds and thirds. Everything was eaten up, so I would call that a success!

Tis Berry Season



Summer is so delicious! I love the strong flavors of berries. When the season is right, eating a berry is like popping a piece of candy in your mouth, except better!

Quinoa Chili


I am not a fan of the grain, quinoa. But, I know that it is a protein and good for you power packed grain! So, I am trying out new recipes with it. I found one that I actually liked!

HERE is the recipe.

I ate 2 bowls. I have NEVER gone back for seconds of quinoa. We had company and everyone ate at least 2 bowls of the stuff. My daughter who usually chokes down and gags while eating quinoa ate her whole bowl with very little complaining and no gagging or choking. So, I am introducing you to this delicious dish. Also, I thought it was weird that the recipe called for avocados on top. I had one laying around, otherwise I wouldn't have had it with the chili. I STRONGLY suggest adding the avocado. SO yummy! It really added to it.

Aloha Sauce


My husband made a delicious sauce the other night for our rice and vegetables. It was quite tasty!

Recipe:
  • 2 TBSP molasses
  • 2 TBSP maple syrup
  • 1 TBSP corn starch
  • 1 Cup pineapple juice
  • 1/4 C- 1/2 C pineapple tidbits
  • 3 TBSP vinegar
  • 3 TBSP soy sauce
  • 1/2 tsp minced garlic
Mix the juice, vinegar, soy sauce, garlic, molasses and syrup together in a pan. Once it is boiling, add the cornstarch. Whisk away until thick. Add the pineapple and ENJOY!

Sloppy Joe, sloppy, sloppy Joe

 
 Oh.... these were sloppy and oh so yummy!

(Tasted just like a 'Joe' I used to have. Texture was great, but different, obviously. All 6 tasted testers gave it 2 thumbs up! )

*quick disclaimer: while the ketchup I used was 'vegan', it isn't exactly whole foods.

Recipe:
  • 2 cans black beans, rinsed
  • 1/2 C cooked brown rice
  • 1/2 onion, chopped
  • 1/2 green pepper, chopped
  • 1/4 C. diced tomatoes
  • 1/4 C tomato sauce
  • 3/4 C ketchup
  • 1 TBSP brown mustard
  • 1/2 TBSP minced garlic
  • 1/4 tsp chili powder
  • TBSP vinegar
  • squirt of agave nectar
  • salt and pepper to taste
Saute' onion, green pepper and minced garlic for about 5 minutes over medium heat. Add all other ingredients. Simmer for about 15 minutes. Turn off stove and let sit with lid for about 10 minutes. Slop the goodness on a whole wheat bun and devour it!
